Amazing Chocolate Chip Cookie Recipe

I was looking for something to do yesterday when I stumbled across my Nigella Lawson cookbook and found a recipe that I now feel duty-bound to share with you, chocolate chip cookies. I've always loved eating them but had never made them before and after tasting them I know I'll be making them again! They're so tasty and crumbly and they're not too sweet so you can eat a good few without feeling sick. This is the process of me baking them from start to finish and if you want to see the recipe I'll write it out below.
 
 
 
Ingredients:
 
150g soft unsalted butter
125g soft light brown sugar
100g caster sugar
2 teaspoons vanilla extract
1 egg, fridge cold
1 egg yolk, fridge cold
300g flour (I used self-raising)
half a teaspoon of bicarbonate of soda
1 x 326g pack choc chips (I only had 100g)
1 large baking sheet (I didn't use one)
 
Recipe:
 
  • Preheat the oven to 170C/ gas mark 3. Line a baking sheet with parchment.
  • Melt the butter and let it cool a bit. Put the brown and white sugars into a bowl, pour the slightly cooled, melted butter over them and beat together.
  • Beat in the vanilla, the cold egg and the cold egg yolk until your mixture is light and creamy.
  • Slowly mix in the flour and bicarb until just blended, then fold in the chocolate chips.
  • I used two spoons to plop twelve dollops of the cookie dough onto two baking sheets (12 in total, not 12 on each) leaving a gap between them.
  • Bake for 15-17 minutes in the preheated oven, or until the edged are lightly toasted. Cool on the baking sheet for 5 minutes before transferring to wire racks.
 
Of course, all credit for this recipe goes to the fabulous Nigella Lawson but I thought it was only right that I shared it with anyone that wasn't aware of it so you could go forth and bake these yourself!
P.s. I'm eating one as I write this and my goodness they're good!
